Oatmeal Crisps

Quick note to share what is, I believe, one of the greatest cookie recipes ever created. Bryan’s nanny made these for us whenever we visited (that is a picture of us all watching her favorite soap opera, years ago.). The only change I make to the recipe is to do a heaping teaspoon of Diamond Crystal kosher salt, and I bake on parchment. I don’t get 7 dozen, more like 4 using about 1.5-2 tablespoons of dough per cookie. Nanny’s are the 4th photo down. The best.

  2. Hi Sally! I do not have weights and definitely use the fork method. You want them pretty flat.

    Thanks Tim for sharing this gem! It may be just me but I love reading personal notes in a recipe like “My sifter doesn’t work well, so I don’t bother”. :)

  6. I haven’t been much inspired lately so I’ve been going through my repertoire which is pretty satisfying too but this sounds very interesting now ! Even more because of the background story ! something about that is very comforting . Now I need to buy coconut asap . Thank you nanny !

    Definitely want to try. Is “dessicated coconut” the same as, for example, Baker’s Sweetened Shredded Coconut?

  9. Hi Carol! It is not. You want unsweetened shredded coconut. It is usually finely shredded and most of bigger supermarkets around me stock it in the same aisle as the sweetened stuff you’re talking about. It would be way too sweet if you used the Bakers.

  10. I found this great deal on shredded coconut a few days ago in my local grocery store so I had to buy what they had left . Two pounds ! And I’ve been thinking of a good recipe to try . I don’t cook a lot with shredded coconut. So tonight as I was brewing some coffee I thought of this recipe that I wanted to try since you posted it . I’m now waiting for the second batch to coolong on the counter. Haven’t tried them yet as they’re so hot but I bet they will be great with a good coffee. I’m always looking for great recipes and you never disappoint.

    I finally got around to making these cookies….boy are they delicious!
    They baked to perfection and looked beautiful. I followed the recipe.
    Even my son in law was impressed. Thank you for all your great recipes and stories!
